Accompanied first with peat, black pepper, and cinnamon-spiced toffee. Balanced with salinity and smooth buttermilk. Most notably, the smoke is persistent yet softly accentuates the softer notes to get cappuccino and toasted marshmallow notes. On the finish is dry espresso, and toasted nuts. Tasting Notes: Spanning both Napa and Sonoma, Carneros is defined by maritime influences of the Pacific Ocean and San Francisco Bay. It is an ideal location to grow grapes destined for sparkling wines. Color: 14K gold, golden apple juice. Aroma: baked apple, pear, quince, hint of ginger, toasted bread crust. Palate: full, with an expansive mousse, apple, toast, brown butter, roasted walnuts and pecans. Acidity holds it all beautifully. Tasting Notes: Nose: Very coastal and undeniably peaty (duh). A few drops of iodine, some fresh seaweed and some burnt rubber as well. Initially chargrilled lemon peel as well, as well as lemon balm, but then also some sweet tropical influences. Think guava, mango, and the like. The peat evolves into more elegant wood smoke, alongside tinges of sandalwood. Taste: Slightly thinner than I’d like. Some medicinal peat, as well as grilled fennel. There’s a touch of smoked kiwi, tinned peaches and more of those lemons as well. Also a nice salinity, some aniseed and soot, accompanied by roasted malts. Finish: Medium length. A good amount of lingering wood smoke. Slightly dry. Cloves. Somewhat medicinal.

Tasting Notes: Organic Wine: It has a straw yellow color. On the nose it has floral notes with hint of dry hay and fresh lemon. On the palate it has a soft citrus flavor with hints of crusty bread and acacia honey. Indeed, well balanced and pleasant to drink with and without food. Varietal: Pinot Grigio 100%. Wine-making: The grapes are carefully selected and immediately go through a soft pressing.
